Day 2 - Breakfast and Lunch

Breakfast -  Cereal , cottage cheese and fresh fruit

Cottage cheese?  I can't lie going into breakfast this morning I kept seeing Jane Fonda in her 80s get up.....  But by and large the cottage cheese was a hit.  Our son, Raines (2) loved the cottage cheese, Harris liked it and Mahlon was too busy fighting it to realize that it actually tastes good!  Check out their comments on the "What the Kids Think" page.

The kids felt the cereal was bland so I let them add one packet of Splenda to it and that seemed to do the trick.

Breakfast was hard this morning as we all raced to get out the door but by an large we managed to pull it off!

Lunch - Creamy Potato Soup

I made the soup and salad last night to save time this morning.  Everything looks great but it really doesn't seem like it is enough.  Last night I doubled the amount of potatoes from 4 to 8 but there still isn't much.  So I sent soup with the girls and James (since he missed the zucchini cakes) and I'll take a PB&J.

As a mom, there are few a things I wonder if I'm doing right, a lot of things I wish I did better and a handful of things I'm feel spot on proud of.  One of the things I am proud of is our snack drawer.  Each Sunday I cut up a ton of fresh fruit and veggies - put it into individual serving bags and fill up the bottom drawer of our fridge.  That way we have snacks ready to go anytime anyone is hungry and for lunches.  So to supplement the girls lunch today they picked two bags from the snack drawer - grapes and strawberries.
